Oh, no, I don't own big cat mtn lair. I know the in-laws of the people who own it though. They gave us a discount rate b/c we are friends, so I'm not sure what the daily/weekly rate is. It is beautiful though. We're talking of going back for our anniversary. Is there anything specific that I can answer for you about the area/scenery/what the cabin is like?

You asked for the Eggplant Parmesan recipe - this is just a "quick" thing I do: I buy frozen breaded eggplant slices at Sam's Club. I use jarred basil tomato spaghetti sauce, shredded mozzarella cheese and top with Parmesan cheese. I spray my pyrex dish with cooking spray for easier cleanup. Put a thin layer of sauce on the bottom then alternate single layers of eggplant, more sauce and then the shredded mozarella. The one I made for tonight had four layers of each ending up with the shredded mozarrella and the Parmesan on the top. I have fresh basil in the garden so I chopped some up and sprinkled it over each layer of mozarella cheese. Bake the "casserole" uncovered at 350 degrees for 40 minutes or so. (No need to thaw the eggplant)
I think that I met you a couple of weeks ago. I don't know if you remember but I have the boy/girl twins. We had a great time in Galveston. I always enjoy going to Moody Gardens. I don't care as much for the discovery pyramid as I do the other two. The Imax movies are usually good. I don’t know exactly what you want to do but there is the Strand if you want to go shopping. Also there is putt-putt golf across from the seawall they have two courses. My dad loves the airplane museum. As far as churches go we have gone to Texas City and Bacliff (my sister attends here). Both are fairly small groups that would love visitors. I hope that you have a great time.

You have to sign up but it is a free membership. Click on Virtual Coupon Organizer - it will ask for your state and then you type the coupon you are looking for. It will tell you the date the coupon was published, amount of coupon and the date it expires. This way I only have to keep a list in excel of the coupons I get in magazines and other sources. I file my coupons by expiration date and then when I need one search couponmom.com and find it. I file them by expiration date so
